Chicken and Green Beans Recipe

I love making this chicken recipe because it's good, it's easy to make, and the clean up is easy too. In addition, it's a nice 'comfort food' to feed your family and they're healthy because combining the chicken and beans are a nice way to get your protein and veggie servings in too. Try adding this chicken recipe to add variety to your menu next week and win your family's praise.

Chicken and Green Beans Recipe

Ingredients: 1 1/2 tablespoons butter, 1 teaspoon garlic powder, 1/2 cup diced onions, 1 1/2 pounds boneless skinless chicken thighs or *breasts, 10 ounce package frozen green beans, salt and pepper to taste.

Directions: Melt butter in heavy skillet. Cook garlic and onions until translucent about two minutes. Remove the garlic and onion from the skillet and add the chicken to skillet. Cook the chicken over medium heat, until the chicken is cooked through, about 12 minutes. Remove the chicken from skillet and place on a plate and cover with aluminum foil to keep warm. Put the green beans and cooked onions back in skillet. Cover and cook over medium-low heat until the beans are tender, about 5 minutes. Add the chicken back into vegetable mixture. Continue cooking everything, stirring occasionally, until heated through, about 3 minutes.

Serves 4

This recipe is also a crowd pleaser at potlucks and family gatherings too.

*Note: for a lower-fat version of this dish, use boneless skinless chicken breasts.
