Chicken Veggies and Noodles RecipeIngredients: 1 tablespoon olive oil, 1/2 cup minced onion, 1/2 cup diced carrots, 1/2 cup sliced celery, 1/2 teaspoon minced garlic, 1/8 cup flour, 1/4 teaspoon oregano, 3 cups chicken broth, 2 cups diced potatoes, 1/2 cup cooked chicken chopped, 1/2 cup low fat milk, and 1 cup uncooked egg noodles.
Directions: Heat oil in large heavy saucepan over medium heat. Add minced onions, carrots, celery, and garlic. Cook until onions and garlic are translucent. Sprinkle flour and oregano over vegetables and cook for one minute. Stir in chicken broth and potatoes. Cover and cook until tender, about twenty minutes. Add cooked chicken, milk, and noodles. Cover and simmer until noodles are tender, about 10 minutes.
Serves 4 with leftovers
