Double Dipped Oven-Fried Chicken Recipe

Ingredients: 1 fryer chicken cut up, 1/4 cup low fat milk, 1/2 cup flour, 1 teaspoon paprika, 1/2 teaspoon pepper, 1 cup crushed cornflakes, and 4 tablespoons vegetable oil.

Directions: Preheat oven to 400 degrees. Remove skin and fat from chicken. Pour milk into a bowl and place chicken pieces in bowl until submerged, coating both sides. Place in refrigerator for 30 minutes.

Combine flour, paprika, salt, and pepper in paper or plastic bag. Remove chicken from milk and set milk aside. Place chicken into flour mixture in bag and shake, coating evenly. Place on a wire rack until all pieces are coated with flour.

Re-dip chicken pieces into reserved milk. Place crushed cornflakes on plate. Using 2 forks, turn chicken pieces in crushed cereal to coat.

Place chicken on a foil lined baking sheet and drizzle with oil or spray with non-stick cooking spray. Bake at 400 degrees for 15 minutes. Turn chicken pieces over; continue to bake until chicken is thoroughly cooked, crust is crisp, and juices run clear about 15 more minutes.
