Frito Boats Recipe

Who doesn't remember Frito Boats? They're quick, easy, and so good to eat!

I make up a double batch and freeze extras for a quick week night meal.

Frito Boats Recipe

Ingredients: 1 pound of ground beef, 2 tablespoons olive oil, 1 onion diced, 2 garlic cloves or the equivalent of minced garlic in a jar, 1 can drained pinto beans, 2 tablespoons chili powder, 1/2 (12-ounce) can of roasted tomatoes or 3 tablespoons tomato paste, 1 cup water, 1 teaspoon oregano, 1 tablespoon honey or sugar, 3/4 teaspoon cumin, salt and pepper to taste.

for topping: 1 cup cheddar cheese and diced onion.

Directions: Heat oil in a large skillet. Brown meat in oil, add in onion and garlic and cook until meat is cooked through. Add beans, chili powder, canned tomatoes or paste, water, honey or sugar, oregano, and cumin and bring to a simmer for 10-15 minutes (until thickened) stirring every so often to prevent sticking. Add salt and pepper to taste and stir.

Serve over Fritos or tortilla chips and top with onions and shredded cheddar cheese.
