Lentil Soup Recipe

Lentil soup is not only super cheap to make, it's good for you and tastes great.

This is a basic version of lentil soup that you can add ingredients to your liking to 'dress up'. For instance, you can add some leftover meat or diced veggies and make this a hearty main dish.

Be sure to pair with a salad and crusty bread for a great meal.

Lentil Soup Recipe

Ingredients: 8 cups water, 2 cups dried lentils, 1 onion chopped, 1 celery stalk chopped, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon cumin, and juice of 1/2 lemon to taste.

Directions: Bring water to boil in large saucepan. Add lentils and reduce heat to simmer for 20 minutes. Add onion, celery, carrot, and cook for 10 more minutes.

To serve, season with salt, pepper, cumin, and lemon juice. Serve in bowls with heated pita bread or warm crusty rolls.

*note, for a heartier version, you can also add in a can of stewed tomatoes (drained) when adding vegetables.
