Macaroni and Shrimp
Salad Recipe

Here's a really good macaroni and shrimp salad recipe that my dad would make during the summer.

It's so light and refreshing. You can even use it as a main dish on a hot summer evening.

You can use canned or frozen shrimp. If you're using frozen shrimp, then be sure to defrost in a colander by running cool water over them. And, if using regular sized shrimp instead of baby shrimp, just cut them up into small pieces.

Shrimp Macaroni Salad Recipe

Ingredients: 12 ounces uncooked elbow macaroni, 1/2 cup finely diced green pepper, 1/4 cup finely diced onion, 1/2 cup Miracle Whip, 1/4 teaspoon pepper, 1/4 teaspoon garlic powder, 1/2 teaspoon salt, 2 chopped hard boiled eggs, and 2 cans shrimp drained.

Cook macaroni according to package directions. Drain, cool, and set aside. Combine green pepper, salad dressing, spices, eggs, and shrimp. Add in macaroni and toss lightly. Chill.

Serves 4
