Layered Potatoes and Onions Recipe

Ingredients: 2 pounds potatoes sliced thinly, 2 tablespoons butter, 1 cup thinly sliced onions, 3 tablespoons flour, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 2 cups low fat milk.

Directions: Melt 1 tablespoon of butter in heavy deep skillet. Remove skillet from heat and spread half of the potatoes in the skillet. Layer onions over the potatoes and sprinkle half of the flour, salt, and pepper over the potato mixture. Layer the other half of the potatoes, flour, salt, and pepper. Cut up 1 tablespoon of butter and put on top of the potatoes. Pour milk over the potato mixture and bring to boil over high heat. Reduce heat to medium-low, cover, and cook until potatoes are tender, about 15 minutes.

Serves 4
