Potato Pancakes Recipe

These are a childhood favorite of mine that my mom would make out of leftover mashed potatoes. I now make them for my family and they love them.

My kids don't like mashed potatoes, but they sure look forward to these potato pancakes

Potato Pancakes Recipe

Ingredients: 2 cups leftover mashed potatoes, 1 egg, 1 tablespoon flour, 2 tablespoons whole milk, and 1/4 cup vegetable oil.

Directions: Mix mashed potatoes, egg, flour, and milk. Shape into pancakes. Heat oil in heavy skillet and cook pancakes until golden brown. Flip and cook the other side.

Serves 4
