Shortcake Recipe

Shortcake is one of the easiest Easter dessert recipes and it is very versatile. You take the basic shortcake recipe below and adapt it to fit your family’s tastes.

I like to serve it with strawberries soaked in sugar so the juices from the strawberries come out and top it with whipped cream. I chose strawberries because my mom always served us strawberries soaked in sugar with ice cream and shortcake. Your family might prefer strawberries with just the ice cream. Either way, here’s the recipe.

Shortcake Recipe

Ingredients: 2 cups flour, 4 teaspoons baking powder, 3/4 teaspoon salt, 1 tablespoon sugar, 2 tablespoons butter, 2 tablespoons shortening, 3/4 cup half and half, melted butter, and toppings of your choice.

Directions: Preheat oven to 450 degrees. In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in butter and shortening. Mix in half-and-half. Drop by large spoonfuls onto a baking sheet sprayed with non-stick spray or lined with parchment paper. Brush with melted butter and sprinkle with sugar. Bake for 15 minutes or until brown. Cool and eat with your favorite toppings.

As I mentioned before, my favorite topping is strawberries and sugar. To make this, just cut up some strawberries (about a pint for every two people) and pour about 1/2 cup of sugar on the strawberries, mix, and let it sit until the juices come out of the strawberries. Mix again and it's ready to use as a topping.

The amount of sugar to strawberries you use will vary based on your individual tastes. So, adjust according to how sweet you like your strawberries.
