Taco salad is my "go to" meal when I'm pressed for time and I need to get something on the table quick that my family likes.
So, give this super simple taco salad recipe a try. It's sure to be a hit with your family.
Ingredients: 1 tablespoon olive oil, 1/2 cup chopped onions, 1 pound lean ground beef, 1 tablespoon chili powder, 1 tablespoon oregano, 1 teaspoon cumin, 1 can red kidney beans drained, 1 can diced tomatoes or 2 fresh tomatoes, shredded lettuce, 1 cup shredded cheddar cheese, baked or regular tortilla chips.
Directions: Heat oil in large heavy skillet. Brown ground beef with onion in skillet. Stir in chili powder, oregano, and cumin and continue to cook. Add in beans and tomatoes and mix together.
To serve, place lettuce on four plates. Spoon meat onto lettuce and top with cheddar cheese and tortilla chips.
