Pork and Veggie Stirfry Over Rice Recipe

Ingredients: 2 cups chicken broth, 2 cups hot water, 2 cups uncooked white rice, 2 tablespoons peanut oil, 2 cups frozen broccoli, 1 cup diced carrots, 1/4 cup minced onion, 1 teaspoon minced garlic, 1 small can mushrooms drained, 1 1/2 pounds ground pork, 2 tablespoons soy sauce.

Directions: Heat broth and water in large heavy saucepan, add rice and boil. Reduce heat to low and simmer until done, about 15 minutes. While rice is cooking, heat 1 tablespoon of oil in a skillet. Add broccoli , carrots, onions, and garlic cooking until just tender, about 5 minutes. Remove from skillet. Add mushrooms to skillet and cook for 1 minute, remove, and set aside. Heat the other tablespoon of oil in the skillet add pork, and cook until the pork is cooked through then drain. Add in soy sauce and vegetables to the pork and mix. Cook until heated, about 2 minutes.

Serve pork and veggies over the cooked rice.

Serves 4
